From Simple Cakes to Cake Engineering
Hello, I’m Carol, and I run a successful cake business creating luxury, bespoke wedding and celebration cakes.
Over the years, I’ve made all sorts of weird and wonderful designs, many that have pushed me well outside my comfort zone. I’ve always loved thinking outside the box and trying something a little bit different.
But like most cake makers, I didn’t start there.
We all begin with the basics, simple round and square cakes. Then as our skills grow, so do the expectations. Clients start asking for more complex designs, cartoon characters, sculpted cakes of all shapes and sizes .
And that’s usually the moment where things feel a bit… daunting.
I still remember my very first structured cake. Honestly, I didn’t have a clue where to start. I wasn’t sure what materials to use, how to shape and build it, or even how I was going to transport it without it falling apart.
It took time, practice, and quite a few things not going to plan, but that’s how I learned.
Now, with years of experience behind me, I have the confidence to build almost anything .
And the best part?
You can learn this too.
In this post, I’m going to share 5 simple but powerful tips that will help you start thinking like a cake engineer and give you the confidence to create structured cakes of your own.
What Is a Structured Cake?

Before we dive in, let’s quickly define it.
A structured cake is any cake that:
- Requires internal support
- Is carved or sculpted into a specific shape
- Goes beyond standard round or square tiers
This includes:
- Character cakes
- Gravity-defying cakes
- Sculpted designs like animals or objects
If you’ve ever wanted to create these kinds of cakes, you’re already stepping into the world of cake engineering.
Why Most Cake Makers Struggle with Structured Cakes
Most cake decorators hit a wall when moving beyond basic designs.
That’s because structured cakes require:
- Planning
- Construction skills
- Confidence in carving
Without these, it’s easy to feel stuck or worried about things collapsing or going wrong.
I remember my first structured cake, I didn’t know what materials to use, how to build it, or even how to transport it .
But everything changed when I started approaching cakes differently…
👉 Like an engineer, not just a decorator.
1. Plan Your Structured Cake Design First
Why planning is the most important step
Before you even think about baking, take a little time to sit down and really visualise your cake design.
Think about:
- How many portions you need
- Where the weight will sit
- What will be cake, and what might be supported with other materials
Once you sketch your design, everything starts to feel much clearer. You’ll have a better idea of:
- The overall shape and size
- What internal supports you’ll need
- How much cake to bake
This is something you can do in advance, and honestly, it’s one of the most important parts of making a structured cake .
2. Prepare Everything in Advance
Structured cakes need more than ingredients
Once you have your design, it’s time to get organised.
Structured cakes aren’t something you want to rush, so give yourself time to prepare properly.
You’ll likely find yourself making a few trips to the DIY shop (they’re always very helpful!), picking up bits for your structure and supports.
Make sure you:
- Have all your tools ready
- Know what materials you’ll be using
- Allow more time than you think you’ll need
Preparation really does take the pressure off and helps everything run much more smoothly.
And a little tip from me…
👉 I always make more cake, filling and ganache than I think I’ll need. You’d be surprised how often it all gets used!
3. Build a Strong Cake Support Structure
This is where cake engineering begins

This is the part where things can feel a little bit daunting, but take your time with it.
You need to make sure you have the right tools and equipment before you begin building your cake structure.
Don’t worry if things don’t go right the first time.
You’ll often find yourself adjusting, taking things apart, and repositioning them. That’s completely normal.
It’s far better to take your time here and get it right than rush and risk problems later.
Also, don’t forget:
👉 Always cover any non food-safe materials so they don’t come into contact with your cake or coverings
4. Start with Smaller Elements First
Don’t build everything at once

Once your structure is in built, you might be wondering…
“Where do I actually start?”
I always recommend beginning with the smaller elements of your design, such as:
- Arms
- Legs
- The head
Depending on your design and portion sizes, you can use:
- Rice Krispie treats
- Polystyrene
- Or cake
Starting this way makes the whole process feel much more manageable and helps you build confidence as you go.
5. Learn How to Carve a Cake Properly
Carving is where your design comes to life

This is where your cake really starts to come to life.
I always go back to my original sketch at this stage and use it as a guide.
One of my biggest tips is to work with a chilled cake. It’s much firmer and makes carving so much easier.
I personally use an old bread knife, nothing fancy, just something that gives me good control.
Take your time here:
- Don’t remove too much at once
- Keep checking your proportions
- Step back and look at your cake from different angles
Once you’re happy with your shape:
- Cover your cake in ganache
- Pop it back in the fridge to set
This makes covering with sugar paste so much smoother and less stressful
The Truth About Making Structured Cakes
Building a structured cake really isn’t as scary as it looks.
It all comes down to:
- Planning
- Preparation
- Taking things step by step
Once you’ve got those foundations in place, that’s when the fun really begins.
That’s when you can start shaping, creating, and bringing your ideas to life.
A Little Encouragement Before You Go
It does take time, practice, and confidence to take your cakes to that next level.
But I truly believe anyone can learn this with the right guidance.
I hope these tips have given you the confidence to have a go and start building your own structured cakes.
