MEET CAROL

Carol is an International Award Winning Cake Designer creating bespoke/stylish/luxury wedding and celebration cakes. 

Carol is the founder and owner of Cakes By Carol which has won numerous business awards and was also shortlisted in the Cake Masters Magazine ‘Best Product Award’ for a cake tool she developed which now sells worldwide.

Carol’s cakes have been featured on International news channels and have been published in several cake magazines including the Cake Masters magazine, Saracino online Magazine, Wedding Cakes magazine and the American Cake Decorating Magazine.  Carol has also demonstrated for Cake International, Saracino and The British Sugarcraft Guild. With years of experience and knowledge Carol now teaches online as well at her cake studio and is a guest tutor at various cake schools.

Carol lives in the small village of Stilton in Cambridgeshire with her husband Shane and their dog Bailey.

What tools & equipment are required for the first stage You will be shown how to draw an outline plan, to get an idea of scale for the internal structure. How to work out the dimensions for the structure and boards, plus where to drill the holes. Where to get the tools and equipment

Module 2

Building the structure

Cutting and preparing of the boards and feet as well as the supporting rods.

Putting together the structure ready for the building of the cake so that you will be confident in getting this bit right

How to prepare the nose and mouth area

Module 3

Assembling the cake

Shown how to put the cake together on the structure and carve the shape using templates

Cover with ganache and how to get it nice and smooth

Shown how to fill any gaps and re shape if required

HI! I’M CAROL

I’ve been making cakes since I was a teenager, whilst at Catering college training to be chef before joining the Army.  Whilst in the army I used to compete in the annual Christmas cake competition that most of the chefs took part in.

When we moved back to England I carried on working as a civilian Chef for the Army, as well as making the odd cake here and there. I remember the very last cake I made before my husband left the Army was a wedding cake for his boss. The idea of setting up a business never crossed my mind until hubby said ‘why don’t you make cakes for a living?’ So that’s what I did when we settled in Peterborough.    

Whilst working as a part time chef I was also making cakes for the business. The orders started to rush in so I decided to quit my job and focus on the business full time. I did this at the beginning of the recession back in 2008 and it was the best thing I ever did!  

With the business growing I wanted to expand my skill set, this led me to Cake International. I entered the following year and won Silver in the Wedding cake category.

Since then I’ve won many Gold awards in the Wedding, Celebration, and Sculpted cake categories. I have also won Regional business awards and had many of my cakes featured in well known cake magazines including Saracino Magazine, Cake Masters, The Wedding Cake Magazine and The American Cake Decorating Magazine.I have demonstrated for The British Sugarcraft Guild, Cake International, Saracino, and Global Cake Artists Unite. Teaching is one of the things I really enjoy, passing on my years of knowledge and experience with lots of handy hints and tips.

Yes there were tears but having learnt from my mistakes I now have the confidence to take on any order that comes my way’

Covering square cakes with sugarpaste had always been my nemesis. I tried over and over again without success and I needed help.

I had a 1:1 with Carol and covered everything from ganaching to covering a square cake. We did a dummy cake and a real cake. Carol was very patient and showed me where I was going wrong.

The day was very informative and I learnt a lot of new techniques.

Carol is very easy to get along with and I felt I could ask the same thing again if I didn’t understand it the first time.

Having a 1-2-1 with Carol has definitely helped me up my game with how I cover my cakes and the Sharp Edge Smoother is a great addition to any bakers tool kit.

Now I don’t fear when asked for a square cake, If anything I push my customers towards them. I wouldn’t hesitate in booking another course with Carol

 This course is for all abilities from beginners to experienced cake makers

We offer payment plans, now’s the best time to do it, and will be more expensive next year.

The course will take place via Zoom with extra videos, PDFs  and workbooks. There will also be a private Facebook Support group for the duration of the programme.

The class will start with Module ONE on Monday 28th of June at 8pm. The weekly sessions will then take place every Monday at 8pm (BST)

No it’s not required as the course is spread over some weeks

You will have the opportunity to ask questions at the end of each class plus you can ask in the Facebook support group.

The class is delivered via Zoom, videos and PDFs will be saved in a classroom area online.
